Chocolate Oatmeal Bars Preparation:
First butter a 9 by 13 inch glass, or metal pan REAL GOOD!
Preheat oven to 355 degrees, (DO IT NOW so your oven will be ready when you are.)
An’ make sure your oven racks are IN THE MIDDLE, (Why? Because Chocolate Bars aren't too good when they turn out doughy on top, an’ burnt on the bottom, that’s why.)
Chocolate Oatmeal Recipe Ingredients:
2/3 cup butter or margarine, softened
(Use butter, it tastes much better, you don't always need to worry about counting calories.)
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
2 tsp. vanilla
4 cups quick cooking rolled oatmeal
1 package (6 ounces) semisweet chocolate chips
2/3 cup creamy peanut butter
1/3 cup chopped dry roasted peanuts
Chocolate Oatmeal Bars Recipe Directions:
Find yourself a large bowl and electric mixer, beat butter and sugar until creamy; stir in corn syrup, vanilla, and oats, blending thoroughly. Pat dough evenly over bottom of a greased 9 by 13 inch baking pan. Bake oatmeal crust in a 355 degrees oven for about 22 minutes or until golden around edges; let cool in pan on a rack, then cover and refrigerate until cold.
Meanwhile, place chocolate chips and peanut butter in a 2 quart sauce pan. Stir over very low heat until melted and smooth. Spread mixture evenly over baked oatmeal crust; sprinkle with peanuts. Refrigerate until topping firms slightly (about 20 minutes); then cut chocolate oatmeal bars into bite size pieces, about 1 by 2 inches. Store bars, covered, in refrigerator.
