Lemon Coconut Bar Recipe
1 cup flour
1/2 teaspoon salt
1 teaspoon vanilla
1 egg
1 lemon rind, grated
1/2 teaspoon baking powder
1/2 cup brown sugar, firmly packed
2/3 cup shortening
3/4 cup rolled oats
1 cup powdered sugar
1 teaspoon lemon juice
1 tablespoon milk
1/2 teaspoon vanilla
2 tablespoons butter
1/2 cup flaked coconut
Lemon Coconut Bar Preparation:
Preheat oven to 350°F.
In a large mixing bowl, cream together shortening, brown sugar, vanilla and the egg.
Add in the flour, salt, baking powder, oats and lemon rind, mix well.
Spread into 8 x 8 inch baking pan.
Bake for 25 minutes.
Lemon Coconut Bars Frosting
In a medium size mixing bowl beat butter until creamy.
Add milk, lemon juice and vanilla beating on low until creamy.
Add powdered sugar and beat until smooth.
Frost cooled bars and sprinkle coconut on top.
Cut into squares and enjoy.
