Pineapple Bars Recipe Preparation:
First butter up a 9 inch square baking pan.
Preheat oven to 355 degrees, (DO IT NOW so your oven will be ready when you are.)
An’ make sure your oven racks are IN THE MIDDLE, (Why? Because Pineapple bar Cookies aren't too good when they turn out doughy on top, an’ burnt on the bottom, that’s why.)
Pineapple Bars Recipe Ingredients:
1/2 cup (1/4 pound) butter or margarine, softened
(Use butter, it tastes much better, you don't always need to worry about counting calories.)
1 cup firmly packed brown sugar
2 eggs
1/4 tsp. almond extract
3/4 cup all purpose flour
3/4 tsp. baking powder
1/2 tsp. salt
3/4 cup flaked coconut
1 can (8 ounces) crushed pineapple packed in its own juices, drained well
Pineapple Bars Recipe Directions:
In a large mixing bowl and electric mixer, beat butter and sugar until creamy; beat in the eggs and almond extract. In another bowl, stir together flour, baking powder, and salt; gradually add to butter mixture, blending thoroughly. Stir in coconut and pineapple.
Spread pineapple bars mixture evenly in a greased and flour dusted 9 inch square baking pan. Bake in a 355 degrees oven for 25 to 32 minutes or until top spring back when lightly touched. Let pineapple bars cool in pan on a rack, then cut into 2 inch bars. Store bars in airtight containers.
