1 jar of Date Nut Cookies dry mix.
1/2 cup butter, softened butter or margarine
(HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a date nut cookie, not a piece of celery. Forget the diet for once!)
1/2 cup water
1 egg (lightly whipped with a fork in a small bowl.)
2 tsp. rum extract
1/4 cup vegetable oil
First, preheat your oven to 355 degrees. Lightly grease cookie sheets.
Remove dates from sealed bag and put in a medium bowl. Add the water to dates and set aside.
Next, in a large bowl, beat butter until smooth. Beat in eggs and rum extract until blended. (Mixture may appear curdled.) Add dry Date Nut dry mix and remaining ingredients to butter mixture; stir until well blended.
Drain water from dates, add the dates to cookie batter, stir into cookie dough.
Put level tablespoonfuls of dough about 2 inches apart onto prepared cookie sheets; flatten dough slightly. Bake date cookies for about 15 minutes or until a bit firm. (Watch them date nut cookies close, nobody likes burnt cookies.) Let cookies stand on cookie sheets till completely cooled. Then remove cookies to your favorite cookie plate.
