Lemon Bars Cookie
Dry Ingredients:
2 -1/4 cups all-purpose flour
1 cup sugar
1 cup dried cranberries
1 Tbsp. grated lemon peel
3/4 tsp. salt
3/4 tsp. baking soda

Lemon Bars Wet Ingredients:
1 jar of Lemon Bars dry cookie mix.
1/2 cup butter, softened butter or margarine (HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a bars cookie, not a piece of celery. Forget the diet for once!)
1/3 cup of thawed frozen lemonade concentrate
1 egg (lightly whipped with a fork in a small bowl.)
First, preheat oven to 375 degrees. Lightly grease 13X9-inch baking pan.
In a large bowl, beat butter until smooth. Beat in lemonade concentrate and egg until blended. (Mixture may appear curdled.) Add Lemon Bars dry cookie mix, to butter mixture; stir until well blended.
Press dough evenly into prepared pan. Bake Lemon Bars 20 to 25 minutes or until golden. (Watch them Lemon Bars close, nobody likes burnt cookies.) Cool completely in pan on wire rack. Cut into bars.
This lemon bars recipe makes about 2 -1/2 dozen bars.
