Strawberry Oat Bars
Dry Ingredients:
2 -1/2 cups uncooked quick oats
1 cup all purpose flour
1 cup packed light brown sugar
or use dark brown sugar for a more maple flavor
2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt

Strawberry Oat Bars Wet Ingredients:
1 jar of Strawberry Bars dry cookie mix.
1 cup butter, softened (HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a bar cookie, not a piece of celery. Forget the diet for once!)
1 can (21 ounces) strawberry pie filling
3/4 tsp. almond extract
First, preheat oven to 380 degrees.
In a large bowl, add Strawberry Oat Bars dry cookie mix, add butter, beat till well blended and crumbly.
Next, press 2/3 of crumbly mix into bottom of ungreased 13X9-inch baking pan. Bake 15 minutes; let cool 5 minutes on wire rack.
Time for strawberry pie filling, place in food processor; process until smooth. Stir in the almond extract.
Pour filling mixture over cooked crust. Sprinkle remaining crumb mixture evenly over filling. Return to oven; bake 20 to 27 minutes or until topping is golden brown and filling is slightly bubbly. (Watch them Strawberry Oat Bars close, nobody likes burnt cookies.) Let Strawberry oat bars stand on baking pan till they cool completely on wire rack.
