Toffee Delights
Dry Ingredients:
1/2 cup all-purpose flour
1 package (12 ounces) semisweet chocolate chips, divided

1 cup toffee baking pieces
1 -1/2 cups flaked coconut
3/4 cup packed light brown sugar
1/4 tsp. baking powder
1/4 tsp. salt

Toffee Delights Wet Ingredients:
1 jar of Toffee Delights dry cookie mix.
1/4 cup butter, cut into small pieces (HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a cookie, not a piece of celery. Forget the diet for once!)
1 tsp. vanilla
2 egg (lightly whipped with a fork in a small bowl.)
First, preheat oven to 355 degrees. Line cookie sheets with parchment paper.
In a large bowl, microwave chocolate chips on high for one minute, stir, microwave again for 30 seconds, stir, continue till chips are melted. Add butter, stir till melted. Beat in egg and vanilla until blended. Add toffee delight dry cookie mix, to butter chocolate mixture; stir until well blended.
Drop large rounded tablespoonfuls of dough 3 inches apart onto prepared cookie sheets. Flatten the cookies a little. Bake toffee delights cookies 14 to 17 minutes or until edges get firm. (Watch them Toffee Delights cookies close, nobody likes burnt cookies.) Let cookies stand on cookie sheets for 2 minutes. Slide parchment paper and cookies onto counter top to cool.
