Toffee Delights
In A Jar Recipe

Are you ready for some recipe in a jar, fun? These toffee delights cookies are packed with flavor and will make a find gift. It's always best to use the freshest ingredients that you can find. So, in this homemade cookie mix in a jar recipe, be sure the flaked coconut and toffee baking pieces are tasty fresh.

This cookie in a jar recipe will fit nicely in a one and one half quart jars. Always remember to top your finished jar with a nice piece of fabric. A hand made gift tag along with ribbon or string to complete your gift.

Cookies In a Jar, Recipe Reminders

You'll be adding ONLY DRY INGREDIENTS to the jar.

Recipe Note: DO NOT put ingredients in a bowl to mix all together, (the idea is to LAYER these ingredients in the jars one at a time, an’ DON’T go shaking it up when loaded either.) You should have different colors in the jar, white on bottom, & the color of brown sugar and toffee pieces on top….GET IT?
Pack each layer slightly, before adding the next ingredients.

Toffee Delights
Dry Ingredients:

1/2 cup all-purpose flour
1 package (12 ounces) semisweet chocolate chips, divided
Recipe Note: Put chocolate chips is a clear resealable bag, place on top of layered jar.
1 cup toffee baking pieces
1 -1/2 cups flaked coconut
3/4 cup packed light brown sugar
1/4 tsp. baking powder
1/4 tsp. salt

Toffee Delights Wet Ingredients:

1 jar of Toffee Delights dry cookie mix.
1/4 cup butter, cut into small pieces (HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a cookie, not a piece of celery. Forget the diet for once!)
1 tsp. vanilla
2 egg (lightly whipped with a fork in a small bowl.)

First, preheat oven to 355 degrees. Line cookie sheets with parchment paper.
In a large bowl, microwave chocolate chips on high for one minute, stir, microwave again for 30 seconds, stir, continue till chips are melted. Add butter, stir till melted. Beat in egg and vanilla until blended. Add toffee delight dry cookie mix, to butter chocolate mixture; stir until well blended.
Drop large rounded tablespoonfuls of dough 3 inches apart onto prepared cookie sheets. Flatten the cookies a little. Bake toffee delights cookies 14 to 17 minutes or until edges get firm. (Watch them Toffee Delights cookies close, nobody likes burnt cookies.) Let cookies stand on cookie sheets for 2 minutes. Slide parchment paper and cookies onto counter top to cool.

Deerlake Cookies to Share Coffee Cup

Grandma's Cookies and Tea

As I watched the sun sink low in the west, I reminisced about my grandma and how she loved the sunset. She would sit on the swing on the porch, eating one of her famous sugar cookies and sipping her cup of tea. She would watch the big, round, yellow ball kiss the horizon and softly say a prayer thanking God for another beautiful day.

However, during the day she did what she loved best. She would get out her recipe box and go through her cookie recipes to see what she thought would appeal to her loved ones. She knew that my favorite was oatmeal and raisin and my brother’s was brownies with frosting on them. My sister was partial to Grandma’s peanut butter cookies.

She would finally decide on which cookie she was going to bake that day. No matter what Grandma made they were always a hit!!

Oh how I miss my Grandma’s home baking. Grandma left her cooking sheets and cookie recipes for me, but somehow, no matter how hard I try, I can never get mine to taste the same as Grandmas! But I won’t give up because I am sure one day, my granddaughters will reminisce about their Grandma’s cookies and try to get them to taste as good as mine!

In case you haven’t heard … gourmet style cookies are to 2013 what cupcakes were for 2011! The cookie's somewhat dull, predictable reputation has undergone a complete makeover from glazed and filled to become the latest trend in the pastry scene. Artisan and “designer” cookies are popping up at local Farmer’s Markets, specialized bakeries and are even being featured on menus in restaurants, as a delightfully delicious dessert.

here are what some abbreviations mean.

c.= cup (what else?)
tsp. = teaspoon
Tbsp.= Tablespoon (notice this one is always capitalized)
pwd.= powder
amt.= amount
lt. br. = light brown (as in sugar)
lg. = large (as in eggs)

granulated sugar = white sugar
(you know, the kind ya stir into your coffee each
mornin’ before your eyes will open).
