Creamy Peanut Butter Cookies Recipe
1 cup margarine
1 cup brown sugar, packed firm
1 cup granulated sugar
2 large eggs
1 cup creamy peanut butter
1 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
Creamy Peanut Butter Cookie Preparation:
Preheat your oven to 350°.
In a large mixer bowl, cream margarine, peanut butter, brown sugar and granulated sugar together until smooth.
Add in the eggs and beat until fluffy.
Add peanut butter and vanilla and beat well.
Combine the flour, baking soda and salt, add into the creamy mixture and beat on low speed of mixer until well blended.
Roll dough into balls about the size of a walnut.
Drop onto a greased cookie sheet.
Use a fork dipped in sugar to shape cookies, making a nice crisscross pattern on the top of each creamy peanut butter cookie.
Bake the peanut butter cookies until golden brown (8 to 10 minutes).
Place cookies on wire racks to cool.
Note: Do not over bake cookies.
Even if they seem too soft when you take them out they will firm up as they cool.
