Peanut Butter with White Chocolate Chips Cookie Recipe

1 cup chunky peanut butter
1 cup unsalted butter
1 cup organic cane sugar
1 cup packed brown sugar
2 tsp vanilla
2 eggs
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup white chocolate chips

Cream together the chunky peanut butter, unsalted butter, organic sugar and brown sugar. Mix in the eggs and vanilla.
Stir the flour mixture into the butter mixture and stir until well incorporated.
Gently fold in the white chocolate chips and using a cookie scoop (which I really need if I’m going to keep baking like this) or a big spoon, drop tablespoon-sized dollops of peanut butter with white chocolate chips cookie dough evenly across a non-stick sheet pan or onto a cookie sheet lined with parchment paper. With a fork dipped in sugar, press down on each peanut butter cookie making a crisscross pattern.
Bake cookies for about 10 minutes or until the edges begins to brown slightly.
Let cool for 1 minute on the sheet. Transfer to wire racks and cool completely.
