Date Filled Cookies Recipe
1 cup butter
2 cups brown sugar
3 large eggs
1/2 cup water
2 teaspoons vanilla
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/8 teaspoon cinnamon
2 cups dates, pitted and chopped
3/4 cup sugar
3/4 cup water
1 cup walnuts, chopped fine
1 teaspoon vanilla
nonstick pan spray
Date Filled Cookies Directions
Preheat the oven to 350° F.
In a large mixing bowl cream the butter and brown sugar together until fluffy, add in the eggs, water and vanilla, beat well.
In a separate bowl combine the flour, salt, baking soda and cinnamon, mix well.
Add the dry ingredients to the butter mix and stir until completely moistened.
Date Filling
In a small saucepan combine the dates, sugar, water, and vanilla, bring mixture to a boil over medium heat while stirring constantly, cook until mixture is thickened.
Remove from heat and stir in the chopped walnuts.
Drop 3/4 of a teaspoon of cookie dough onto a parchment line cookie pan and top dough with about 1/2 teaspoon of date filling and place another 3/4 teaspoon of dough on top of the filling.
Bake date filled cookies for 10 to 12 minutes.
Date filled cookie recipe makes about 36 cookies.
