Raisin Cookies Recipe

2 cups raisins
1 cup boiling water
1 teaspoon baking soda
1 cup butter
2 cups granulated sugar
1 1/2 teaspoons vanilla
3 large eggs
4 cups all purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1 cup walnuts, chopped
Preheat the oven to 350°.
Place raisins is a small glass bowl, cover with boiling water and let stand for 5 minutes.
When water has cooled add in the baking soda.
In a large mixing bowl cream the butter, sugar and vanilla together until smooth, add in the eggs and beat well.
Add the raisin mixture to the butter mixture and fold in gently.
Add the flour, salt, cinnamon and nutmeg, mix well.
Fold in the chopped nuts.
Line cookie sheets with parchment paper and drop Raisin Cookies by rounded teaspoons and bake 10 to 12 minutes or until lightly brown.
