Almond Sugar Cookies Recipe Ingredients:
1/2 cup butter or margarine, softened
(HINT: use butter, they sure taste better even if there are a few more calories. Geeze! You’re eating a cookie, not a piece of celery. Forget the diet for once!)
1 cup white sugar (granulated)
1/2 cup firmly packed brown sugar
1 egg (lightly beaten in a small bowl with a fork, remember, like I told you in those other recipes?)
1 tsp. vanilla
2 cups all purpose flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. ground cinnamon
3/4 tsp. ground cardamom
5 dozen whole blanched almonds
Get out a big bowl and your electric mixer, beat the butter, granulated sugar, and brown sugar until creamy.
Add the egg and vanilla, beat until combined.
In another bowl, stir together flour, salt, baking powder, cardamom and cinnamon; gradually add to butter mixture. Blend almond sugar cookies batter thoroughly. Dump cookie mixture out and onto a lightly floured board. Divide cookie mixture into 4 equal portions.
Next, roll each portion into a 15 inch rope. Cut each rope into 1 inch or so pieces. Gently press an almond or two into each piece. Place cookies 2 inches apart on ungreased baking sheets. Bake almond sugar cookies in a oven at 350 degrees for 15 minutes or until lightly browned. Then let it cool on baking sheets for one minute, next, transfer off of cookie sheets to a cool surface. Store almond cookies in an airtight container.
