Lemon Sugar Cookies Recipe
The recipe below holds the key to your own perfect sugar cookies from scratch. If you like, you can experiment with many different colors of icing and sugars, candied pieces or fruit pieces make excellent topping for this delightful lemon sugar cookie recipe.
2 sticks butter
1 cup oil
1 cup powdered sugar
1 cup granulated sugar
2 large eggs
4 cups flour
1 teaspoon cream of tarter
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon lemon extract
Lemon Sugar Cookies Directions:
Preheat your oven to 375 degrees F.
In a large mixing bowl cream together the butter, oil, powdered sugar and granulated sugar, add in the eggs and beat well.
Add the flour, cream of tarter, baking soda, salt and lemon extract, mix until well blended.
Refrigerate 3 to 4 hours or overnight. (Overnight is best).
Roll dough into balls about the size of a quarter and place on greased cookie sheet.
Dip glass into granulated sugar and then press down on the cookie.
Bake for 10 to 12 minutes ofr until lightly browned around edges.
Decorated with colored frosting and candied pieces.
